Serves 6.
4 slices Wholemeal Bread
2 Red Onions, diced
Olive Oil
3 Cloves Garlic – finely chopped
750g Lean Minced Beef
2 tbs Madras Curry Paste
Handful Sultanas
Sprinkling Oregano
2 tbs Mango Chutney
300ml 1% Milk
2 large Eggs (or 3 Medium)
Soak 2 slices of the bread in a little milk and put to one side.
Fry the Onions and Garlic in a little Olive Oil. Add the Mince and cook well – break up to avoid lumps. Stir in the Curry Paste, Oregano, Sultanas and Chutney with a little Black Pepper to taste.
Simmer for approximately 15 – 20 minutes. Squeeze the bread and add – mixing well into the mixture. Place the mixture into an overproof dish.
Beat the Eggs and the Milk and crumble in the remaining slices of bread. Pour over the meat. Sprinkle with Nutmeg and cook in hot oven (180°C/gas mark 4) until the topping is set and golden in colour.
Serve with mixed salad.
This is the national dish of South Africa and is pronounced ‘Bo-Boer-tea’. I have made a few tweaks to make it even healthier – i.e. by using Wholemeal Bread instead of white and 1% Milk for the topping. I hope you enjoy it!
