Doughnut Muffins © Makes 12

140g Brown Caster Sugar plus extra for rolling

200g Plain Flour

1tsp Bicarbonate of Soda

100ml Natural Low Fat Greek Yoghurt

2 Eggs (lightly whisked)

140g Flora Buttery or Butter - melted

1 tsp Vanilla Essence

Raspberry Jam


Turn oven on to 190⁰c – gas mark 5.


Mix the Sugar, Flour and Bicarbonate of Soda together in a bowl.


Whisk the Yoghurt, Eggs and Vanilla Essence together and add to the dry mixture above along with the melted Flora.


Fold in carefully to combine the ingredients.


Share two-thirds of the mixture between 12 Muffin Cases.


Place 1 tsp Raspberry Jam in the centre of each and then finish off by adding the remaining mixture on top of each.


Bake for approximately 15 minutes – until golden brown and springy to the touch.


Allow to cook for a few minutes and then carefully roll in a little Caster Sugar.


A healthier doughnut – no deep frying…. We have also used Flora Buttery and a low-fat Yoghurt. Not totally sin free – but lots better than the original!
