Cheese and Spring Onion Quiche ©

Serves 4


100g (4 oz) Plain Flour

50g (2 oz) mixture of Lard and Sunflower Margarine/Butter

Cold water to mix

Filling

3 medium Eggs

150ml (quarter pint) semi-skimmed Milk

100g (4oz) Reduced Fat Medium Cheddar Cheese

Spring Onions finely chopped

Black Pepper to taste


To make the Pastry, place the Flour into a bowl and rub in the Lard and Sunflower Margarine, using your fingertips. It should look like fine breadcrumbs.


Use a knife and mix in the water to form a stiff dough. Knead gently; keep as cold as possible. Turn out onto a floured board and roll out to line a 9” round flan dish.


Whisk the Eggs and Milk together and pour over. Finish by sprinkling the Cheese over the top and bake in the oven (190®C, gas mark 5) for approximately 45 minutes until golden brown and set.


I really hope that you enjoy this Quiche. I have made it a little healthier by using semi-skimmed milk and reduced-fat cheese. You won’t notice that the cheese is of the reduced fat variety in this dish – I promise!
